Soft Apple Tart

This minimally sweet, low fat, soft apple tart looks like you spent hours in the kitchen. But if you slice the apples on a food processor the preparation is only minutes.

  • 2 1/2 cups oat flour
  • 1 cup walnut meal (finely ground walnuts)
  • 2/3 cup quick cook oats
  • 1 TBL baking powder
  • 1 tsp salt
  • 5 cored apples, sliced thin
  • 3 cups soy milk
  • 3 TBL organic 100% fruit preserves
  • 2 TBL melted margarine (optional)

In a large bowl combine oat flour, walnut meal, oats, baking powder and salt. Mix together dry ingredients and then quickly add all of the soy milk at one time. Mix with a wooden spoon. The batter will initially be very thin. Pour into a greased jelly roll pan (approx. 14" x 10"). As you prepare the apples, batter will thicken in the pan.

Cut apples in half and thinly slice leaving peels on. I use my food processor with a slicing blade. Begin at one end of the pan and layer the apple slices down three rows, overlapping slightly. Melt the preserves in the microwave (about 30 seconds) and then brush over the top of the apple tart before baking. If you like you can also brush melted margarine on the top of the tart just before placing it in the oven. Bake at 350 degrees for 25 minutes. Serve warm or cold.
