Creamy Coconut Amaranth
This hot breakfast cereal is a wonderful change of pace from oatmeal.
- 1 cup amaranth
- 3 cups rice milk or almond milk
- ½ cup shredded unsweetened coconut
- ¼ tsp salt
Combine ingredients in large sauce pan and bring to boil over medium-high heat for 45 minutes or until liquid is absorbed. |
