Creamy Coconut Amaranth

This hot breakfast cereal is a wonderful change of pace from oatmeal.

  • 1 cup amaranth
  • 3 cups rice milk or almond milk
  • ½ cup shredded unsweetened coconut
  • ¼ tsp salt

  Combine ingredients in large sauce pan and bring to boil over medium-high heat for 45 minutes or until liquid is absorbed.
