Banana Oat Muffins
- 3 ripe bananas
- ½ cups applesauce
- 1 tsp vanilla
- 2 TBL Egg Replacer
- 1/3 cup oil
- 1 ½ cups Oat Flour*
- 2 tsp Baking Power
- 1 tsp salt
- ½ tsp cinnamon
Preheat oven to 350°.
In food processor of mixing bowl, cream bananas, applesauce, vanilla, egg replacer and oil. In a separate bowl combine remaining ingredients, then add wet mixture and gently blend together being careful not to over mix batter.
Spoon into muffin pan and back for 20-25 minutes at 350°. Muffins are done when a toothpick inserted in the center comes out clean.
* You may substitute almost any whole grain flour such as barley, brown rice, sorghum or spelt. |
