Banana Oat Muffins

  • 3 ripe bananas
  • ½ cups applesauce
  • 1 tsp vanilla
  • 2 TBL Egg Replacer
  • 1/3 cup oil
  • 1 ½ cups Oat Flour*
  • 2 tsp Baking Power
  • 1 tsp salt
  • ½ tsp cinnamon

Preheat oven to 350°.

In food processor of mixing bowl, cream bananas, applesauce, vanilla, egg replacer and oil.  In a separate bowl combine remaining ingredients, then add wet mixture and gently blend together being careful not to over mix batter.

  Spoon into muffin pan and back for 20-25 minutes at 350°.  Muffins are done when a toothpick inserted in the center comes out clean.

  *  You may substitute almost any whole grain flour such as barley, brown rice, sorghum or spelt.
