Pancakes
Weekends at our home mean pancakes for breakfast. But these wonderful wheat alternative flat jacks make perfect "bread" for sandwiches all week long. Freeze them in pairs for a quick and easy mid-week meals.
- 1 c Barley Flour
- 2 c Oat Flour
- 1 TBL Baking Powder
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 2 TBL Melted Margarine (optional)
- 2 1/2 c Water
Combine all ingredients and let rest 5-10 minutes or until the oat flour has had a chance to thicken. Ladle on to a hot oiled skillet and heat over medium high about 2-3 minutes then flip and continue cooking another 1-2 minutes on the second side. Serve with warm blueberries.
