Pumpkin Waffles
These waffles are crisp on the outside and moist on the inside.
- 1 cup Potato Starch
- 2 1/2 cups Oat Flour
- 1 TBL Baking Powder
- 1 tsp Salt
- 1 cup Walnut or Almond Meal
- 3 TBL Olive Oil
- 3 cups water
- 1 can Pumpkin
Combine dry ingredients in a large bowl and gently fold in the oil, water and pumpkin. Cook according to the directions on your waffle maker. Serve with Cranberry Syrup if desired.
Cranberry Syrup: Sort and rinse two cups fresh cranberries. Place in saucepan with 1/2 cup water and cook over medium heat until berries pop and release their flavor. Just before serving add 1/4 cup pure maple syrup (or to taste.)
