Blueberry Dream Pie
This no bake pie recipe is easy to prepare. Soymilk and cornstarch make a perfect pudding base for the blueberry filling. Just chill and enjoy!
- Filling:
- 1 1/2 cups organic frozen blueberries
- 1 1/2 c soymilk
- 3 TBL cornstarch
- Crust:
- 1.5 cups walnuts
- ½ c raisons
Place blueberries and 1 cup of the soymilk in sauce pan. Simmer on medium heat until berries are warm.
While blueberries are simmering, place walnuts and raisons in food processor and blend until you have a sticky nut meal. Press the nut mixture on the bottom and sides of your pie plate.
In a small cup mix remaining 1/2 cup soymilk with cornstarch until smooth. Pour cornstarch slurry into warm berries and stir over medium low heat until mixture starts to thicken.
Ladle blueberry mixture into your prepared pie shell and refrigerate until set. |
