Espresso Bites
- 1 c Brazil Nuts
- 4 Ripe Bananas
- ½ c Apple Sauce
- 3 TBL Decaf Instant Coffee
- ¼ c Margarine or Oil
- 1 tsp Vanilla Extract
_____Dry Ingredients_____
- 2 ½ C Brown Rice Flour
- 2 tsp Egg Replacer
- 1 TBL Baking Powder
- ½ tsp Salt
Preheat oven to 350°. Place Brazil nuts in food processor until finely ground. Add bananas and pulse until mixture is blended and no large pieces of banana remain. Add the remaining wet ingredients and mix well.
In separate bowl, combine dry ingredients and mix with wet mixture just until all of the flour is incorporated.
Spoon into prepared mini muffin tins and bake at 350° for 12-14 minutes.
