Healthy Quick Stew

Daniel 1:12   Prove thy servants, I beseech thee, ten days; and let them give us pulse to eat, and water to drink.

As the story goes, Daniel refused the kings wine and food and asked that he and his men be given only pulses (lentils, beans) and water.  After ten days Daniel and his men were said to be more fit than those who ate the king's diet.

Today, the Burger King temptation of a quick family meal can make the thought of preparing a whole grain dinner an ancient notion.  But this little jar contains all of the goodness found in these forgotten treasurers and in only 20 minutes you can feed your entire family a hearty main course.

  • 1/4 cup Split Green Mung Beans
  • 1/4 cup Split Red Lentils
  • 1/4 cup Jasmine Rice
  • 2 tsp salt
  • 2 tsp tumeric
  • 1 tsp dried garlic
  • 1 tsp dried onion
  • 3 cups water

Place mung beans and lentils into a small strainer and rinse well, sorting through the grains to remove any anomalies.

Place all of the ingredients into a large stock pot and add 3 cups water.  Cover pot and bring to a boil over medium-high heat then reduce heat and simmer for about 15 minutes or until most of the moisture has been absorbed.

The dish is perfect alone or with a dollop of sour cream, salsa, flax seed oil or your other favorite topping.
