Tofu-fredo Primavera

  • Rice Fettuccini Noodles
  • 1 package frozen organic veggies
  • 1 TBL margarine
  • 1 lb soft tofu
  • 2 TBL fresh basil or 1 tsp dried basil
  • ½ c walnuts

Prepare rice noodles as directed on package, adding the fresh or frozen veggies to the pot during the last few minutes of cooking. Meanwhile, melt margarine in large skillet and add soft tofu. Mix well until you have a creamy alfredo sauce. Add basil, walnuts and salt/pepper to taste. Serve atop of hot noodles and veggies.
