Light and Fluffy Spinach Loaf

  • 1 medium size white onion
  • 2 carrots
  • 1 cup peeled and cubed eggplant.
  • 1 cup frozen spinach
  • 6 slices spelt bread
  • 1 can garbanzo beans

Place onions and carrots in food processor and blend until finely chopped.  Sauté mixture in frying pan until almost tender.  Then add cubed eggplant and continue sauté another 5-10 minutes.  Add spinach and cook just until thawed (if using frozen.)

Place bread in processor with garbanzo beans and pulse until you have course mixture. Combine with ingredients from sauté and mold into a baking dish.  Bake in a 350 degree oven for 30 minutes.
