Freezer Black Bean Patties

Make these ahead of time and store in the freezer until ready to use.  They make a quick and delicious meal at a moment's notice.

  • 1 large russet potato
  • 2 cans organic black beans
  • ½ c oat flour
  • ½ c rolled oats
  • salt and cayenne pepper

Peel and cut one large baking potato.  Boil until just tender.  Place all ingredients into food processor and pulse until mixture is well blended.

  Chill in refrigerator  for at least 20 minutes.  Place 2 large spoonfuls of bean mixture inside of a sandwich zipper seal bag and press into the lid of a plastic serving container that is the size of the burger that you want to create.  Store the burgers in a cylindrical container in the freezer until they can hold their shape.

When you are ready to serve them, simply place frozen patty in lightly oiled frying pan and sauté 3-4 minutes on each side over medium heat.
