Baked Beanballs

Perfect with corn spaghetti, these baked bean balls are low fat and high in protein.

  • 1 can garbanzo beans
  • 1 shallot
  • 1 clove garlic
  • 1 cup breadcrumbs or 1 cup brown rice flour
  • ½ tsp salt
  • black pepper or dash of cayenne pepper
  • 1 tsp oregano or cilantro

 Preheat oven to 400°.

Combine garbanzo beans, shallot and garlic in food processor and pulse until well blended. Add remaining ingredients and mix well. With wet hands form into small balls and place each in mini muffin pan. Bake at 400° for 30 minutes. Serve with Spelt or Kamut or your favorite whole grain spaghetti.
