Rice Mold

This simple dish can have a very fancy presentation when you use a bundt cake mold to shape the casserole right before serving.

  • 2 c Cooked Brown Rice
  • 1 16 ounce package frozen spinach (thawed and drained)
  • 1 Can Butter Beans
  • 1 Sweet Onion

Sauté onion in olive oil until translucent.  Place onions and butter bean in food processor and puree until it forms a paste.

Butter or oil a casserole pan or bundt cake pan and press half of the rice mixture into the bottom of the pan.  Spread bean paste on top of rice and then layer with spinach.  Top with remaining rice and pat down lightly. Bake at a 425° oven for 15 minutes or until heated through.  Unmold just before serving.
