Crepes
Perfect for Sunday morning or freeze them between layers of wax paper and take one out a time for a quick sandwich wrap or alternative to flour and corn tortillas.
- 2 c Potato Starch
- 1 ½ c Garbanzo Bean Flour
- ½ tsp Salt
- 1 tsp Baking Powder
- 3 TBL Egg Replacer mixed with 1/2 c soy milk (or one egg)
- 2 TBL Honey
- 2 TBL Melted Margarine or Butter
- 1 c Soy Milk
- 1 ½ c Water
Combine dry ingredients together and blend with remaining items until you have a smooth consistency. Working with high heat, spray pan with olive oil and ladle quickly, tilting the pan until the bottom is entirely coated with a thin layer of batter.
For Sunday brunch, serve with tofu cream cheese and fresh sliced organic strawberries. Or top with your favorite jellies and apple butters.
